Wild Abalone Cold Noodle Salad

Throughout many parts of Asia, the hot and humid summer months result in a lack of appetite and generally avoiding cooking hot dishes that make you sweat even more. Many cold dishes are very popular during this season so we thought we would replicate a cold noodle recipe with our wild abalone for added protein.

This type of noodle salad is called Hiyashi-Chuka which is translated to “chilled Chinese” food. This dish can be topped with many vegetables and salad greens to keep you cool for the summer!

Ingredients

1 can Calmex Wild Abalone

1-3 ramen noodle packets (1 packet per person)

1-2 eggs

1-2 tomatoes

1-2 cucumbers

1-3 green onions

1-3 Tablespoons of cold noodle base

Directions

Fill a pot with water and bring to a boil.

While the water is boiling, heat your frying pan and add some butter or oil of your choice. Scramble your eggs well and pour it in the frying pan and keep it thin and flat like an omelette. Cook through both side and flip onto a cutting board and let it cool.

Add your noodles to your boiling water.

Open up your Calmex Wild Abalone and thinly slice however many piece you would like on your salad.

Chop up the tomatoes and green onion while thinly slicing the cucumbers.

Drain and wash your noodles with cold water and even add some ice cubes while draining to ensure they stop cooking.

Add your 1-3 tablespoons of cold noodle base into a large serving bowl and 1 cup of water to dilute the soup base. (Please, taste the base and add less or more to your liking. If the cold noodle base is more flavorful than you’d prefer, add water to dilute!)

Back to your egg omelette, fold egg in half and cut small thin lines.

Add your cold noodle into the large serving bowl first.

Top with your cucumbers, tomatoes, egg slices, abalone and top with green onion and it’s done! A quick, healthy noodle salad with protein to get you and your family through those hot summer days.
